22 hours abundant love

She came and she left after 22 intense hours. Not that she is actually leaving, just switching home towns, as for me, she is part of the flatshare just as I am part of hers! So Anna and I finally got to spent time in my new home and as usual, it didn’t take us a lot of time to dive deep and get on the philosophic and spiritual wave. Also, what I notice every time is that face-to-face talking about thoughts and feelings is worth a mint!! Like how we both feel about living with other people and not sharing a room anymore, how we perceive our friendship etc!

You guys, wait with evaluating a situation until you have heard the other sides perception! Talking is everyting 🙂

Moreover, we made it to the food store and later cooked a freaking filling vegan dinner! Well, there may be healthier things than potato rösti (hash browns), but the vietnamese summer rolls were some real goodness consisting of heaps of fresh veggies, tofu and rice noodles! Talking of food I want to remind myself: see it as energy. An unripe mango does not have any nutritional value, so a fruit based diet in germany (especially in autumn, winter, spring) just doesn’t work so well! Here we have all kinds of cabbage, tubers, ground veggies.. yay! 😀 But seriously; I love me some mashed potatoes with fried veggies and some sort of beans or other rprotein sources 🙂

Awesome yet so simple lunch! Boiled potatoes with Mango-Papaya-Curry paste and “egg-salt” (Kala Namak salt), cherry tomatoes and fresh parsley! Many carbs, low fat. Reminder to myself: decrease bad sugar and fat intake! And eat as much as you need – not less, not more! Motivation Saturday haha! Haven’t had cocolate tonight… success! 😀 (I am not saying that one should be restrictive [as long as it’s nutritious food], I just know that sugar is highly addictive and bad fats really do nothing good for your body, so I want to be able to live happily without them 🙂 It’s really just the temptation because “healthy food” is actually 1879725 times better and tastier! 🙂 )

Also I was driving today, first time in Germany since forever! Feels good to overcome such fears (however, rather respect in this case) and to just DO IT! Because in the end you’ll be okay and get more comfortable every second. So in case that any of you guys fears driving a bit… it’s ok. The roads are wide and even. Try driving in Portugal haha! ❤

Power Lunch (Recipe)

So basically this is what I eat for lunch everyday haha! It’s so good and satisfying, stuffing yet light!

TOMATO-PASTA SAUCE (vegan, glutenfree, sugarfree, fatfree)

serves one person

150-200 g glutenfree Pasta
1/2 Zucchini / Courgette, finely diced
5 Mushrooms, sliced
Tomato passata (tomato purrée)
pitted olives (not the oily ones)
ground almonds / almond meal
some agave syrup or other natural sweeteners
Seasoning ( thyme, oregano, pepper, salt, balsamic vinegar)

➸cook the pasta until soft

➸in the meantime, stew the vegetable bites in a pan with the lit on -> take it off after like 2 minutes and fry the veggies (no oil required as long as there is some water left in the pan)

➸add the tomato passata and let it cook for 2 more minutes

➸ take the sauce off the hob and add thyme, oregano, balsamic vinegar, pepper + salt and the sweetener to taste

➸ add the sliced olives to the sauce and combine the pasta with the sauce

➸ put the pasta + sauce in a bowl and garnish with ground almonds —> HEAVEN!
