Abundance on my plate (+waffle recipe)

Started the day with a bowl of fresh local fruits (which looked so freakin juicy and yummy that I had to show you guys via pictures :D) and homemade vegan gluten free waffles with soy yoghurt and blackcurrant jam! This combo thooooo *____*

And because we like sharing I’ll share my rule-of-thumb recipe!

VEGAN + GLUTENFREE BREAKFAST WAFFLES

Pour some vegan milk (I love to use vanilla rice milk because of the flavor) in a measuring cup and sweeten with a splash of agave nectar. Then put in some spoonfulls of corn flour, so that the mixture is still very fluid. Add about 1 teaspoon of baking powder and a bit of salt and vanilla (if not already in the milk).

Then put in gf-flour mix (mine from Dr. Schär mainly contains rice and potato flour) until the mixture is thick but still pourable. Btw: you can mix any gluten free flours and just experiment. Buckwheat flour is really nice as well, giving it that grainy texture, just as ground flaxseeds or coconut shreds. Have I mentioned oat flakes instead of flour? Incredibly good! You see, so many options!!

Bananas work pretty well, too, so just try out what you like but always watch out for the thick yet pourable texture!

 

I guess, this was the most unconventional recipe of all times hahah, I basically said : take milk, baking powder, flour and some substitutes of your choice, mix until thick and smooth and bake until ready 😀

Carbs after dark

Quick update:

just came home from my Ultimate training – so exhausting yet soo satisfying! 😀 and my parents made a ton of gluten free pasta with coconut sauce and another ton of veggies swimming in there (the photos are from Portugal tho 😛 GF pasta with vegan pasta sauce and falafel) ! Ah carbs are just the best! (Have to get another spoonful after writing this post haha! And yes it is 11 pm and I am proud of eating #carbsafterdark 😀 )

Today I did some cleaning, drawing and then went to the forest to meditate. It went well but at some point I got aware of the mosquitos… they were so quiet but still there! So I left my spot in the midst of sand, moss and trees and found myself a nice lonely bench 🙂

Also I cycled to the sports field and back, which is quite far, but I experienced once again that being out to walk or cycle without time pressure ist just so liberating! Pure joy and abundance 🙂 Looking forward to the weekend! Packed with friends and love! xx Jule

Balcony BBQ

So we’ve got a cut little BBQ grill for our balcony. Because balconies are such a blessing during german summers and we kind of want to live out there throughout the whole season!

The free magazine SCHROT UND KORN (www.schrotundkorn.de) featured some badass veggie BBQ recipes, like this grilled asparagus or soft sweet potatoes, filled tomatoes and chickpea salsa. Goes perfectly along with a seasonal salad like rocket with strawberries *_*

1: Here we’ve got the sweet potato “steaks” loaded with guacamole and seasoned chickpea-soy yoghurt-mix (season with garlic, lemon juice, p+s, chili flakes) So so sooooooo good!! However, the sweet potatoes take ages when put on the grill in their raw state. Maybe it’s best to cook them 2-3 minutes before grilling 🙂

2: Grilled quinoa filled tomatoes – heaven! Fry some onion in coconut oil and add a little bit of coconut milk (optional), then mix with cooked quinoa and chili flakes. Wowowow. The coconut gives this whole composition a “ahhhh, mhhh, what is that gorgeous taste” effect! Try it and love it 🙂

Mornings like this *_* I usually have pure and raw fruits on my empty stomach in the morning, first thing after the fast the body does over night. Incredible health benefits, even plays a huge role in preventing and  curing diseases such as cancer! Sometimes, after digesting the fruit portion, I love to make myself waffles. Well, more frequently than “sometimes”. But they are gluten free, vegan, sugar – and fat free, is there still guilt? NO! All is well especially with homemade vegan chocolate spread (I blend up cashews and hazelnuts together with cocoa, agave nectar, vanilla, plant milk and a bit of coconut oil)! Have a lovely sunny summery successful happy productive relaxing bright day!! Love and light to you guys ❤

Long weekend (+smoothie bowl)

As I am working from home it really feels the same, whether it is a official holiday or not, but I am using the long weekend to get some things done with other people. That’s why I’m heading to Berlin tomorrow to meet up with Anna and another friend, gosh, we see each other so rarely atm, but we are still deeply connected which makes it easier 🙂

Yesterday evening I went to Ultimate Frisbee the second time, alone, mixed with 20 or so students that I didn’t know. Well, it went super well! Believe me when I say that I haven’t done anything nearly as exhausting as this for a very long time… but our game was wrong haha and I even scored a few times 😀 Besides, the team spirit is really special… really good! Unlike when climbing or canoeing or cycling, you really are part of a team and have to “Work” close together! Bought a frisbee now and am ready to challenge Lotte next week haha ❤

1 banana, handful pineapple chunks, handful frozen berries, hot water (to defrost) topped with cacao, orange, pineapple, walnuts,coconut and berries!

This was my breakfast, smoothie bowls (and any kind of bowls) are just so photogenic! Apropos photos… there may or may not be new ethical clothing outfit pictures up here shortly! ❤
