A most amazing weekend

Hey you lovely being sitting in front of the screen,

I am back from a very special roadtrip my people Anna and Elsa + moi went on! Without planning, we visited plenty of cities in western Germany we’ve never seen before! Most of them were true gems, super pretty and with a good vibe! We then slept in a forest, had campfires (who needs boys tho ;D) and indulged in the feeling of freedom and pure living. We ain’t need nothing more but the peaceful nature, a warming fire, filling food and our company… love it! Anyway, when I find the time (please be patient with me, I think I’m currently in my busiest phase of life so far) I’ll provide you with some phone snaps of our trip 🙂

This seed gives you LIFE!

My beloved sister criticized that I don’t blog enough recently 😛 So here you go, a splendid picture of a smoothie bowl I had for breakfast some days ago, when I actually had time and fruits this day 😀 Well, let’s not exaggerate here; a smmmmothie bowl takes like 5 minutes MAXIMUM and for this one I only used one banana+frozen strawberries+mandarine for the smoothie and topped it with another banana, coconut shreds and hemp seeds!

Speaking of hempseeds..Let’s do some real talk about them! 🙂

According to purehealingfoods.com they are the most nutritious seeds in the world! They combine proteins, essential fats, vitamins, enzymes and minerals (phosphorus, magnesium, calcium,iron,potassium, manganese and zinc) in perfection! Additionally they almost lack any sugar, starches or saturated fats! It is said that they have many health benefits such as leading to lowered colesterol and blood sugar, weight loss, increased energy, rapid recovery from disease or injury etc pp.

You can do your own research, it’s mindblowing and Anna and I were astounded when she first read about it! Now I have them back in stock-finally. And I suggest to you to do the same 🙂

 

22 hours abundant love

She came and she left after 22 intense hours. Not that she is actually leaving, just switching home towns, as for me, she is part of the flatshare just as I am part of hers! So Anna and I finally got to spent time in my new home and as usual, it didn’t take us a lot of time to dive deep and get on the philosophic and spiritual wave. Also, what I notice every time is that face-to-face talking about thoughts and feelings is worth a mint!! Like how we both feel about living with other people and not sharing a room anymore, how we perceive our friendship etc!

You guys, wait with evaluating a situation until you have heard the other sides perception! Talking is everyting 🙂

Moreover, we made it to the food store and later cooked a freaking filling vegan dinner! Well, there may be healthier things than potato rösti (hash browns), but the vietnamese summer rolls were some real goodness consisting of heaps of fresh veggies, tofu and rice noodles! Talking of food I want to remind myself: see it as energy. An unripe mango does not have any nutritional value, so a fruit based diet in germany (especially in autumn, winter, spring) just doesn’t work so well! Here we have all kinds of cabbage, tubers, ground veggies.. yay! 😀 But seriously; I love me some mashed potatoes with fried veggies and some sort of beans or other rprotein sources 🙂

Started the day with a bowl of fresh local fruits (which looked so freakin juicy and yummy that I had to show you guys via pictures :D) and homemade vegan gluten free waffles with soy yoghurt and blackcurrant jam! This combo thooooo *____*

And because we like sharing I’ll share my rule-of-thumb recipe!

VEGAN + GLUTENFREE BREAKFAST WAFFLES

Pour some vegan milk (I love to use vanilla rice milk because of the flavor) in a measuring cup and sweeten with a splash of agave nectar. Then put in some spoonfulls of corn flour, so that the mixture is still very fluid. Add about 1 teaspoon of baking powder and a bit of salt and vanilla (if not already in the milk).

Then put in gf-flour mix (mine from Dr. Schär mainly contains rice and potato flour) until the mixture is thick but still pourable. Btw: you can mix any gluten free flours and just experiment. Buckwheat flour is really nice as well, giving it that grainy texture, just as ground flaxseeds or coconut shreds. Have I mentioned oat flakes instead of flour? Incredibly good! You see, so many options!!

Bananas work pretty well, too, so just try out what you like but always watch out for the thick yet pourable texture!

 

I guess, this was the most unconventional recipe of all times hahah, I basically said : take milk, baking powder, flour and some substitutes of your choice, mix until thick and smooth and bake until ready 😀

My weekend

My weekend  was so different somehow haha! Like normally when I am alone at home I’d spent lots of time inside doing nothing… especially when it’s 30 + °C outside – pretty reasonable, huh? But this time I did a lot of stuff..

On friday evening I went to Lottes (ex-) place to help her renovate a bit. This is where I spotted the beautiful flowers btw *_* Also, isn’t the quality astonishing for an iPhone 4?

When we finally finished we went back to mine, we had the place to ourselves, made a delicious veggie lasagne with cheeeeese (vegan ofc) and then watched “How to be single”. I watched it with Anna before and it was so hilariously funny I watched it again with Lotte.

On saturday I thought I could finally take a look at a climbing centre in Leipzig… I went climbing every other day in Bristol and haven’t used my gear ever since. Anyway, every circumstance spoke against going on that day, it was frickin hot outside, it was getting late, I could have gone the next day, I had no-one to go with, I would have had to cycle for 30 min. BUT I just couldn’t stand that feeling of “doing nothing and feeling bad about it” anymore, so I JUST WENT. On my own, and yeah, it was fun! I bouldered a bit, inspected the centre (which is amazing) got 3 decent blisters and went back after like 40 minutes 😀

Later Lotti and I wanted to meet up for a picnic in the park where a free open air classical music festival took place, but when I arrived it started to POUR, I was completely soaked after 3 seconds, no kidding!!! But it was warm and utterly energizing, such a good feeling!! Drenched like after a good shower I cycled back home and had my sushi without company haha, but the little trip was worth it anyway!

My hands, or rather the open blisters, hurt so much but thats part of the deal. They’ll heal quickly. Today I cleaned my room, got rid of unused stuff, sorted my wardrobe and then cooked dinner for my family – wedges with a stir fry (pak choi, broccoli, mushrooms, onion, soy sauce)  and guacamole *_* They loved it and so did I, now we are gonna enjoy a quite and cozy evening with reading and cuddling.

 

 

First vitamins, then waffles

Mornings like this *_* I usually have pure and raw fruits on my empty stomach in the morning, first thing after the fast the body does over night. Incredible health benefits, even plays a huge role in preventing and  curing diseases such as cancer! Sometimes, after digesting the fruit portion, I love to make myself waffles. Well, more frequently than “sometimes”. But they are gluten free, vegan, sugar – and fat free, is there still guilt? NO! All is well especially with homemade vegan chocolate spread (I blend up cashews and hazelnuts together with cocoa, agave nectar, vanilla, plant milk and a bit of coconut oil)! Have a lovely sunny summery successful happy productive relaxing bright day!! Love and light to you guys ❤

Power Lunch (Recipe)

So basically this is what I eat for lunch everyday haha! It’s so good and satisfying, stuffing yet light!

TOMATO-PASTA SAUCE (vegan, glutenfree, sugarfree, fatfree)

serves one person

150-200 g glutenfree Pasta
1/2 Zucchini / Courgette, finely diced
5 Mushrooms, sliced
Tomato passata (tomato purrée)
pitted olives (not the oily ones)
ground almonds / almond meal
some agave syrup or other natural sweeteners
Seasoning ( thyme, oregano, pepper, salt, balsamic vinegar)

➸cook the pasta until soft

➸in the meantime, stew the vegetable bites in a pan with the lit on -> take it off after like 2 minutes and fry the veggies (no oil required as long as there is some water left in the pan)

➸add the tomato passata and let it cook for 2 more minutes

➸ take the sauce off the hob and add thyme, oregano, balsamic vinegar, pepper + salt and the sweetener to taste

➸ add the sliced olives to the sauce and combine the pasta with the sauce

➸ put the pasta + sauce in a bowl and garnish with ground almonds —> HEAVEN!
